I just wonder what are the other vegetables to start growing in December in German cold climate?

I think for most vegetables it is recommended to start in February/March in our climate.
However I think I read about some people starting cape gooseberry and tomatillos very early.

Do you mean indoors or outdoors?
Many people here start their hot peppers in Dezember, but only if they use additional light. Otherwise it is better to wait till February.
As tomatoes, physalis, tomatillos, egg plants or squash are very fast growing plants Mid-March to April is the time to start their propagation indoors.
You can grow salads, rocket, cress or some asian vegetables (mizuna, mibuna, komatsuna ...) in containers indoors all the year round.
If you don't own a greenhouse, you start outdoors in February (if the soil is not frozen) with carrots, radishes etc. Main sowing/planting time ist March to April.

i meant mainly indoor planting.
for outdoor planting, how much protection you need? is it mainly coming with mulch?
i don't have greenhouse in that sense but i built for my raised bed from old lattenrost a very simple greenhouse which currently contain peas, spinach, onion and a prunned chili plant

Hardy plants are able to survive winter without protection. (Darmstadt is USDA hardy zone 7. )
Brussels sprouts, Sprouting broccoli, kale, leeks, parsnips, scorzonera, salsify, Hamburg root parsley and winter cabbage are hardy vegetables and don't need much protection. Rhubarb grows much better after frost and snow.
Half hardy plants e. g. roses, peonies or some of the mediterranean herbs need mulch, straw or small fir tree branches as protection.
Tender plants should be liftet und stored in a dormant state.
